Chemical properties: white powder. An alkaline glycoprotein extracted from ovalbumin consists of four essentially identical subunits. Each subunit is a single-chain polypeptide containing 128 amino acid residues, N-terminal is alanine, C-terminal is glutamic acid, and the carbohydrate component is linked to the 17th asparagine residue. Boiling or irradiation can destroy it. It can be coupled with enzymes and ferritin by reduction, conversion or glutaraldehyde cross-linking. Each molecule can bind to four molecular biotins. It is very soluble in water and salt solution. Isoelectric point (pI) 10-10.5. Absorption coefficient (E1% 282 nm) was 15.4 (pH 7 in 0.05 mol/L sodium phosphate solution).
