Chemical properties: It is easy to disperse into sol in boiling water, insoluble in cold water, but it can not absorb and expand into gel block, and the sol is neutral reaction. Agar is easy to disperse in hot water, even at low concentration of 0.5%, it can form a solid gel. 1% of the agar sol solidified at 42℃, and the gel did not melt even at 94℃, and had strong elasticity. The coagulation temperature of agar sol is relatively high and can be changed into gel at 35℃. Agar has high water absorption and water holding capacity. When dry agar is immersed in cold water, it slowly absorbs water, swells and softens, and can absorb more than 20 times of water. Agar gel has strong heat resistance.

Usage: Qiongzhi can be used as food thickener, silk sizing agent, laxative agent, drug adhesives, thickeners and capsules. It can also be used as bacterial culture medium, immobilized enzyme carrier, inclusion material of bacteria and electrophoresis medium.
